THAI BEEF SALAD WITH TENYAKI DRESSING
INGREDIENTS
TENYAKI DRESSING
- 6 TBSP sake
- 6 TBSP mirin
- 6 TBSP dark soy sauce
- 1 TBSP sugar
PREPARATION
Combine sake, mirin, dark soy and sugar in a small pot. Heat over moderate heat
Stirring, until sugar dissolves.
Use now or cool and keep refrigerated until ready to use. (Makes one cup)
- 3 oz Chinese leaf lettuce or mixed leaf lettuce
- 3-4 oz thick fillet beef steak
- ½ TBSP sugar
- 1 TBSP Principal Flavours Original Sauce
- 1 ½ TBSP lime juice
- 1 ½ TBSP Thai Fish sauce
- 2 red shallots, finely sliced
- 1 ½ TBSP mint leaves
- 1 ½ green spring onion, finely sliced
- 1 red sweet pepper, finely sliced
- 1 cooked and finely sliced carrot
PREPARATION
- Grill or pan-fry the beef until well marked outside, and rare to medium rare inside (2-3 minutes cooking time on each side). Place in a bowl and leave to rest for 10 minutes.
- Dissolve sugar in lime juice and fish sauce.
- Combine shallots, mint, coriander and green onions in a large bowl. Add lime juice, fish sauce and sugar.
- Slice beef thinly, toss beef with crunchy, pepper Chinese lettuce, carrot and cucumbers.
- Taste and adjust flavourings, until the salad is hot, sour, sweet and salty. Pile high on a large plate and serve.
