CHARGRILLED CHICKEN WITH TOMATO CHILLI SALSA
INGRIDIENTS
MARINADE FOR CHICKEN
- 1 TBSP olive oil
- 2 large boneless chicken breast portions, skinned
- 1 TBSP of Principal Flavours Original
- Finely grated zest and juice of 2 limes
- Pinch of salt & pepper
- 1 small peeled and sliced sweet potato (3 oz)
- 2-3oz of mixed green salad leafs
- 1 medium sized romero pepper (or sweet red pepper) (1-2 oz)
TOMATO CHILLI SALSA – combine all ingredients together
- 125 g (4 oz) cherry tomatoes, quartered lengthways
- 1-2 fresh red or green chilies deseeded and diced very finely (optional)
- 1 TBSP Principal Flavours Garlic Sauce
- Juice of 1 lime
- 2 TBSP of freshly chopped coriander
- ½ teaspoon of fine brown sugar (or Demerara)
PREPARATION
- Place chicken breast into a hot ridged or grilled cast iron pan. Over moderate heat, grill chicken breast 5-7 minutes on each side, sprinkle with salt and pepper when cooked.
- Take out chicken, and place on a warm tray.
- Place precooked sweet potato and pepper in pan and grill of 1-2 minutes.
- Dress plate with green salad leafs, pepper and sweet potato. Place chicken breast on top and nape (drizzle) salsa over chicken.
