Principal Flavours was founded in 2004 and came about as a result of Merlene Shaw who always wanted a more unique and versatile Caribbean cooking sauce that would give her guests, friends and family the ultimate culinary experience.  
When she realised such a sauce did not exist she started to experiment with a wide range of ingredients and ended up creating a sauce herself.  Her family and friends fell in love with it, and she was soon inundated with personal orders for the sauces. 

It was Merlene’s son Jonathan, who was studying for a business degree at the time, who recognised his mother’s sauces had the potential to be a great mass market product and suggested that a company be formed to produce sauces for the general food market.

Merlene followed her son’s advice and perfected the current range of sauces , these are Principal Flavours Original, Ginger and Garlic Sauces. 

Principal Flavour sauces were officially launched at the Adornment Exhibition in October 2005 which resulted in an unprecedented demand for them, far exceeding the expectations of the Principal Flavours team.  The company now has an ever growing army of customers, who continually buy the products and have been very active in spreading the word about how good they are to their family and friends. 

Jamaican born Merlene has always harboured a desire to run her own restaurant so that she can personally witness people savour the food she’s prepared for them. 

Merlene has achieved this dream, but not in the way she expected, because now the whole world has an opportunity to savour her culinary skills through her unique range of Principal Flavour sauces.  She is living proof that dreams can and do come true.
